The Holiday Drink – The Method

We present a home-style interpretation of a beverage featured on our latest menu. It's a batch prepared mix which is loaded full of essence associated with Christmas time, which makes it ideal for your festive gathering. Reserve the remaining cordial you can use for breakfast cocktails, puddings, or to mix another batch of this cocktail.

Bikini Recipe

Serves 10 guests

To make the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Combine all the ingredients into a pot, heat until it reaches a simmer, mixing so the sugar melts. Next, turn off the burner and leave to cool down fully. Pour into an sterilised bottle, close it keeping it in the fridge, it will last for about one month.

To make Cocktail Base: Combine all the liquid ingredients in a sizeable container, let it rest for 60 minutes, then filter it best through muslin, to ensure it's perfectly clear.

For serving: Add 85ml from the premix into your mixing glass packed with ice, and stir carefully for one minute until cold. Filter to a cold coupe glass or equivalent, decorate with a few cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
